A friend of mine reminded me about this brown butter cauliflower mash recipe today. It’s so easy to make and it tastes amazing too. Try replacing your usual sauce with it and enjoy with a big, fat steak. No doubt, you’ll be very, very happy.
The browned butter and lemon zest gives this mash an extraordinary flavor that goes perfectly with red meat.
To cook brown butter cauliflower mash, you’ll need …
This recipe should in my opinion be winged/made at a rough estimate/played by ear/done haphazardly, why there’s no amounts on anything. So have fun! And wing it/do it a at rough estimate/play it by ear/do it haphazardly – which ever suits you.
Lemon zest from organic lemon
Milk – preferably whole milk
Salt and pepper
… and then do like this …
1) Brown a good amount of butter in a sauce pan. The more butter you use, the happier you’ll be – so only let your conscience stop you.
2) Dice the onions and let them sear in the browned butter for a few minutes before adding the cauliflower whole or in bouquets.
3) Cover the cauliflower 3/4 with milk and add whole peeled garlic cloves and grated lemon zest, salt and pepper. Cook until the cauliflower is very tender at low heat, occasionally stirring.
4) When tender, blend to a homogeneous mash. Season with salt and pepper.
