As you might already know I love porridge in the morning – and all other times of the day for that matter. Another thing I really enjoy is french toast. This recipe combines the two in the most beautiful way; Crispy outside like french toast and creamy inside like porridge. Yum!

To cook Pan Fried Porridge with Coconut Milk for 1 person, all you need is…

40 g coarse rolled oats
1/2 can coconut milk
water
salt
maybe cardamom or cinnamon

… and whatever toppings you might like, e.i. apple, blueberries, raisins, maple syrup, chopped chocolate, walnuts, almonds, bacon – it’s all good!

And do like this …

  1. The evening before mix together oats and coconut milk. Add water as you see fit. Cook porridge in a casserole until done whilst stirring and add salt. Leave to set in the fridge in a container over night.
  2. Next day take out the porridge and cut it into appropriate pieces.
  3. Fry in olive oil until crispy and golden on all sides.
  4. Serve with your favorite toppings with a nice cup of coffee or tea on the side.

Psst! Why not make a large portion? Then you’ll have breakfast for the rest of the week too. The porridge can easily keep in the fridge.
